New & Improved Me

If you were to look at me 4 years ago in terms of domestic-ness, I was a walking disaster. The women in my family are all excellent cooks & domestic goddesses basically. I’m sure Tim was disappointed to realize that all those home cooked meals – yeah, they weren’t coming his way. I was the girl who didn’t get those fabulous genes. I was the girl who put dishwashing soap in the dishwasher (total bubble disaster). I was the girl who didn’t know how to use the washer and dryer (whites turn pink, things shrink, etc). I was the girl who caught scrambled eggs on fire (yes, this is sadly true). The girl who burned toast in the microwave. The girl who basically had never thought she’d needed to learn about being domestic because she’d never had to learn.

Years went by and I learned how to use a dishwasher and thankfully, a washer and dryer as well. I was always good at cleaning though because I hate clutter and mess. Things have to be in order. I was good at the organization and all things related. But I never learned to cook. I hated it. Why in the world would I want to spend hours in the kitchen for only 2 people to eat dinner in a matter of 10 minutes? For the life of me, I could not understand why people did it. I mean, I liked a home cooked meal just like the rest of them, but not enough to slave over it.

Then I became a Mom. Things slowly changed. I was pregnant and baking – from scratch! What!?! A domestic gene was released within me that I didn’t know I had! Then once Karys started eating food, I realized that I wasn’t going to let her eat the crap that we would eat. I wanted her to be healthy. I wanted her to develop a taste for the right foods. I wanted to (gasp) cook for my family! So one of my resolutions this year was to learn to cook better and more healthy meals.

Guess what I did this weekend!? I watched Rachael Ray while I was home with Karys on Friday. And then I cooked two delicious and healthy meals! Of course, I did spend about an hour for each meal, but it was very satisfying to have a gorgeous meal on the table for myself and my husband.

What’s on the menu you ask?

Saturday: Cod Croquettes, Sweet Red Pepper Gravy & Mashed Potatoes w/Spinach
Sunday: Tenderloin Steaks with Gorgonzola & Herbs, Roasted Garlic & Grape Tomato Pasta with Basil & Arugula

I think Tim was so excited with these meals that he possibly could have cried (but didn’t). He sat there “savoring” for a few minutes though. We just sat in silence, in awe of what had just been put in our mouths. I just want to say, Rachael Ray ROCKS!!!

And for my nutritionist, I did exercise portion control. And for those of you wondering about my diet, I have lost somewhere between 3-4 pounds. Thus far is mostly from portion control and tweaking things here and there in my diet. That purse is as good as mine I tell you! :)

  3. I am in SHOCK! my mouth just dropped open!!! thats awesome! You are showing me up! haha – That looks GREAT! and yes you have come a VERY long way in the last couple of years… you forgot to mention your 20lb box-cake that you somehow managed to destroy! still to this day no one can figure out how it weighed 20 lbs… haha now you are going to have to invite me over for dinner!!

  7. Way to rock it! I’m duly impressed. You need to buy the crock pot! And, I have quite a few recipes if you need some. And, for ME to make them (I did all those things you did), you know they’re pretty easy.
